Bread, eggs, and “speck” ham
“Speckknödel” dumplings

Get ready to bring a traditional Tyrolean dish to your dining table. “Speckknödel” on their way!

During your holiday at our hotel in Mayrhofen with spa, did you have the pleasure of tasting traditional “Speckknödel” dumplings and you now want to cook them at home for your family? Here’s the recipe for you!

 

Ingredients for four people:

  • 250g of old, hard bread
  • Salt
  • 250ml of milk
  • 2 eggs
  • 3 tsp of breadcrumbs
  • 80g of diced bacon
  • 30g of butter
  • Chives
  • 1½ l of broth (vegetable or beef)

 

Method:

Start by cutting the bread into small pieces and pouring a little warm milk over it. Melt some butter in a pan and use it to fry the bacon. Proceed by adding the rest of the milk, the eggs, and the fried bacon to the soaked bread. Once you’ve added the salt and breadcrumbs, you can start to shape the dumplings into balls with wet hands. Cook them for about 15 minutes in boiling salted water and enjoy them with broth and some chives. If you’re vegetarian, check out the recipe for “Spinatknödel”, dumplings with spinach.
