When you stay at our hotel in Mayrhofen ski resort, every Saturday is time for baked liver, what we call ‘Zillertaler Ofenleber’. That is just one of the traditional specialities of this region that Wilhelm Pfister junior really looks forward to. It’s like meatloaf made from a mixture of pork liver, lungs and heart, cooked pork belly, diced bread, potatoes, and much more a really hearty dish, especially after an active day in the mountains. Cut into a thick slice and served with a tasty gravy and boiled potatoes with parsley, plain dumplings, or goulash simply delicious! It’s just what you need to satisfy your palate and keep you going for the rest of the day. There is nothing better than returning from a hiking or climbing trip, or after a match of tennis than to sit down to this popular regional dish and one of Wilhelm’s favourite Zillertal delicacies.
